I'm pretty plane Jane so I'd go with white. If it's pressure treated wood (looks like it), I give it at least a few months before I paint it because it's still pretty wet if it's a new installation. I usually end up doing my outside work in the Fall because of the nice temps then let it go through a winter before doing any painting.

It depends. All most all finishes that you can buy as a non-business are non-toxic when cured (dry). That being said I'd try for an essentially food grade finish.. The classic is Bee's wax and MO sightly darkens the wood. Use shellac and tint with food coloring white this works but I hope that you have a wholesale source. (You can use a quick coat of shellac then dust with TiO2 to get a white but I've never tried that). Make your own milk paint then topcoat with shellac or not.
Use something else non-toxic IS NOT food safe,

That is so cool!
I've seen a program on TV called Redwood Kings that sometimes shows stuff like that.
It's amazing to me how old and huge those trees can get. Must be quite a privilege and a lot of fun to work with them.
