Looks good to me. You might consider mounting the vise at the end of the bench where the aprons don't interfere, and you can use it as an end vise if you want. Holdfasts are recommended, even with a vise.

It is split now. It's easier to not change that, and I don't see any real advantage to doing so, unless you really want a tool well. The crosswise bearers make both edges stable, and confine expansion and contraction to the middle gap.

Your assistant looks good too, but the bench might be a smidgen high for him.

EnduroVar is intended to mimic the yellowing of traditional finishes. It ambers like a typical oil. Unless you are at a high altitude and it is in direct sun we are talking years. I would be surprised if there was a compatibility problem.

  My gas dryer quit heating

Remove the cover and look for a fitting that resembles a childs top.
Might be about 2+ " in diameter and 1-1/2" high.Turn the gas ***** off at the machine. Remove the lid portion , you may have to remove the top to get to the screws that hold the lid on.Inside their are felt filter and a spring.Clean it up with compressed air or vacuum any dust out.
Replace everything ,turn gas on and see if the dryer heats now.
When our dryer lost heat i did this until we moved and bought a new one. Usually 6 months or more between cleaning the filters.This dryer was 20+ years old when we got it with the house.
If this fix works and your dryer is not real old I would buy a new unit and replace when the dryer stops heating again.

  Spray shellac & lacquer - acceptable lowest temperatures?

I can only say that 50F is plenty for shellac. I buy flake/seed/button from these guys and mix my own that way I know what I am getting. I've wiped shellac down to 20F and sprayed close to 0F. I've no idea on lacquer as after some tests I don't use it.

I think that if you can't see any pores through the finish, that it is a continuous film, it will be fine. Six days should be long enough to qualify as about fully cured, too. Even if you see a few pin holes, I think you'd still be OK with it to get through the holidays. After things quiet down, scuff sand it and apply a couple more coats.

You get condensation when warm air hits a cooler surface. The foam is a vapor barrier so you won't get condensation unless there is an air leak around it.
